For the past six years, Matt Con has been perfecting the art of brewing kombucha. What began as a personal journey to improve gut health has grown into a thriving local business, Chattan Culture, based in Rossville, Georgia.
A Journey to Gut Health
Matt first discovered kombucha while living in Colorado. A friend, suffering from severe gut issues, introduced him to this fermented tea. Seeing his friend’s success, Matt decided to try it for himself. This tea alleviated his own digestive troubles, including indigestion and constipation.
Not only did brewing kombucha improve his health, but it also sparked interest among friends. Encouraged by their enthusiasm and the compliments on his brewing skills, Matt decided to turn his passion into a business.
The Craft of Brewing Kombucha
Kombucha is a fermented tea that combines sweet tea, high-quality caffeine-rich teas (like green, black, and yerba mate), and a SCOBY (Symbiotic Culture of Bacteria and Yeast). The SCOBY transforms the tea into a gut-health powerhouse, packed with beneficial bacteria, digestive enzymes, amino acids, and antioxidants.
Matt brews his tea in small batches, using locally sourced ingredients. The fermentation process takes about two weeks. Afterward, he flavors the kombucha with fresh, local produce from nearby farmers’ markets and carbonates it for a refreshing, bubbly finish.

Matt’s background in health and wellness, combined with his upbringing in a health-conscious household, fuels his mission. After earning a degree in Health and Wellness from Life University, he found his niche in kombucha brewing, blending his expertise with his passion for vitality.
