Paleo Blondies Recipe

This week we’re taking a slight departure form our normal video and we visit Cady Kuhlman, or co-owner, at her home kitchen. She shares with us a recipe for blondies that features ingredients you can buy directly from our store (with one exception). This is an easy recipe that isn’t packed with unnecessary sugar, but still satisfies that sweet craving should it arise.

Almond Butter Blondies

1 tbsp of ground chia seeds
3 tbsp of water added to the chia
1 cup of almond butter
1/2 cup (or less) of coconut sugar
1 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp of sea salt
1/2 cup to 1 cup of chocolate chips

Combine all ingredients and bake at 350 for 20 minutes.

Hi, thank you guys for watching today. So I'm going to make one of my family's absolute favorite treats. We're not big on sugar in our household. But occasionally we love to have something that's a treat and it's lower in sugar. The wonderful thing with this is, is that my son loves it. He's two and my husband loves it. I love it. My mom came over the other day and was raving about it. So this has really been a special little treat. And I got it from my cousin this recipe from a great website. And so I just want to share it with you guys today. The cool thing is, is that every single item can be found at Nutrition World except for the vanilla extract that's in the recipe. So it's simple, this probably takes me from start to finish 25 minutes and that includes the baking time.  Alright, let's get down to it. So I have to refer to the recipe a little bit here just to make sure I get it right. So even though I've made them probably four times in the last month, okay, so one tablespoon of ground chia seeds. Sure to open this before. Alrighty, so we're gonna do put it in the NutriBullet is when I do, we've got to grind up chia seeds and they normally come in like the full, whole chia form. So I put mine in the NutriBullet. Super, super easy. Come over to the NutriBullet. Okay, so let's go. All right, perfect. So just make it so it's more of a min to a little bit more more of a powder. Wonderful. So one tablespoon of ground chia seeds. We're going to do three tablespoons of water added to the chia seeds, that's going to help them kind of swell up and become gelatinous. I just always add it in the same container. So I like to have less dirty dishes. So we mix that up. Well. All righty. Now let me get the rest of my recipe out. You know what, let me get a let me get a big bowl. Should I have this one out? Perfect. Okay, one more dish we need. So we're going to combine now the rest of the ingredients so we're going to do the almond butter when you use one cup of this I personally love Georgia Grinders brand I don't know if you guys have tried it before. It's phenomenal. Their pecan butter, cashew butter is probably my favorite thing but this recipe calls for the almond butter. It's gonna be one whole cup so it's a lot of almond butter. I forgot to mention that these are also grain free and gluten free. Okay, so I've got a whole cup here the almond butter. Put it over here. Almond butter is so yummy. Okay, so there we go. My ovens, let me know it's ready. Okay, so I'm going to go on and add the chia seed, kind of you can see how it's gelatinous. Now at this point, it's made almost like a little chia pudding, which is going to help the texture of these blondies and I forgot to mention that that's the name of these they're paleo blondies. I tried these about two months ago in an event and I could not believe the taste of them. Alright, let's see. So we're gonna add the coconut sugar. So y'all probably know about coconut sugar is lower on the glycemic index that means it's not going to spike your blood sugar nearly as much. I also personally love the taste of coconut sugar. It has a little bit more of like a dark brown sugar taste. So this a quarter cups I'm going to do two of these because I need a half cup. I sometimes go a little bit less you can see. Again, my family's not huge on on sugar. So this is a treat for us. One teaspoon of vanilla extract. shake that up. One teaspoon and half a teaspoon of baking soda. Love this brand, the Bob's Red Mill. So it's half a teaspoon. Perfect. We're almost through, we only have probably two more ingredients to add. It's got the baking soda. Let's do the sea salt. I love redmond sea salt. So we've got that. So we're going to do a quarter, quarter teaspoon of salt there. Okay. And then we're going to add our dark chocolate chips. So let me start all this first. And we'll stir in the dark chocolate chips last. It's amazing that this could actually make a dessert because you're probably looking at it thinking okay, where's the where's the flour? Where's the oats? Where's something but it doesn't it doesn't need it. So I had preheated the oven to 350 so that was what was going off over there. So they'll be ready to go in. Okay, when a three four step up, I personally am obsessed with this brand of chocolate chips the enjoy life. They're kind of branded as free of everything, meaning they're free of a lot of top allergens. They say on here like free of wheat, peanuts, tree nuts, dairy, soy, casein, eggs, sesame, sulfites, fish, shellfish, crustaceans, so many things. And so this has only two ingredients, unsweetened dark chocolate, and then cane sugar. So I just do i do more about a half a cup. Again, I just kind of like less sugar, and I love the taste of the almond butter really coming through. So add that in. Kind of just fold it in. So just a few times of stirring here. I wish I could smell this. It's so yummy. All right. Okay, perfect. It's all mixed together. So I'm just gonna spray now. And I love coconut oil spray the recipe. If you are to see this recipe, it's gonna say could you use parchment paper. I just don't keep parchment around the house because I don't make that much. And so for me, this works just perfect. So coconut oil spray. Okay, so we're just going to flatten it out here. And this is a nine by nine glass cooking dish. Kind of want to evenly distributed throughout.Alrighty, so soon as I get this even, we will throw it in the oven. And then in about exactly 20 minutes, we will show you what the finished product looks like. And I wish you were here to taste it. But you just have to cook it at home and experience it yourself. I think that's perfect. Okay, throw it right in the oven. And then we'll give you a look. And then we'll probably taste it so you guys can experience what what we think of it. So excited to try these so it just came freshly out of the oven. Start cutting them here. Now they're still hot because I've just pulled them out of the oven. So I never like to cut pull things out too quickly. But they seem to kind of pull and drag some of the the desert with it, but I just want to try a bite for you guys. So you can see smells decadent. And here. Get this little corner piece out. Mmm hmm. So delicious. So we'll have the recipes in this link. And y'all have got to try them. So thank you guys.
